For this purpose the System Dynamics Approach is a very good solution,
which is allready in use in the field you mentioned.
There are several software packages you can use for both, modeling and
visualisation:

All three packages are WINDOWS-like and (in the professional or educational
version) very powerful. You can build your model in two ways - first by
equations, second by drawing. Or you can switch from one to the other.
They have serveral mighty tools to visualize both, the behavior and the
results.

The problem here are the modeling capabilities. Stella / ithink are good
for the presentation of results and for teaching, but most people use it in
addition and not alone.
Using System Dynamics as the fundamental theory they (all four) are able to
be used in very different fields, e.g. economics, engineering, politic
sciences, physics and environmental sciences.
I personally prefer PowerSim. In most cases is has a special feature
included
one version before other software packages have it.
Second, I like the easy use of the visualization tools.
Third, it has a good interface to programming languages I use (Delphi, and
C++).
